Either 이탈리아어 or 이태리어 would work -- I want to say we use the latter more in conversations. -어 can be can be replaced with -말 for almost all languages in colloquial speech.

이탈리아 어 means Italian as in the language, yes :) But if you want to say Italian (something), then you just use 이탈리아 e.g 이탈리아 음식 Italian food 이탈리아 사람 Italian Person 이탈리아 와인 Italian Wine
