La gran diferencia entre los dos es que "referee" es alguien que participe en futbol americano y "umpire" es alguien que participe en beisbol. Los dos guardan las reglas de los deportes.

I think you mean "umpire."
There is no difference. Different sports use different jargon; e.g., "umpire" is baseball, "referee" is American football.
