Please help me with this sentence!
I want to say, what I love about Valencia is.........
Do I say.....
Que me encanta de Valencia es......
Lo que me encanta de Valencia es....
Que/lo que me encanta sobre Valencia es....
Ay help will be apreciated, i know 'lo que' is normally used in the middle of a sentence but unsure if sometimes it can be used at the start. Thanks.

Por cierto, vivo en Valencia y lo que me encanta de Valencia es el clima.

You can and you have to use "Lo que" at the beginning in this sentence. The use of "que" in this case is impossible.
On the other hand, the use of verb "encantar" is semantically correct, but it's not usual for a Spanish speaker. We would use "lo que me gusta de..." or even "lo que me gusta más de" , if you want to emphasise the sentence
