I came across this sentence while reading a text about traveling:
the meaning is understandable but the construction is quite unusual. Could someone please explain it to me?
Would it be just a more polite version of "旅行や観光を希望している人々"? If so, are the sentences below correct?
ご希望の方々 is a more polite version of "希望している人々".
Here is a discussion about "ご希望" on another site in Japanese.

But, it's 謙遜語 related discussion, it's too difficult for beginners, so you don't have to read it.
ご希望の方々 people who want to do something
ご希望の商品 a product which you want to buy
反対の方々 people who against something
勉強中の方々 people who are studying something
勉強の方法 ≒ 勉強方法 a way to study
