Is “raspberry” countable or uncountable?
Is it possible to say “There are some raspberries in the fridge” or it’s correct to say “there is some raspberry”
How does it work with berries when we talk about the quantity, and the topic some/any?

They're countable. I bought some raspberries at the store. I dropped a raspberry on the floor.

Raspberries are countable.
I bought some raspberries at the store.
I ate some strawberries for breakfast.
I put some blueberries on my pancakes.
Also, I can say these 3 phrases without the word "some" and it has the same meaning.
I bought raspberries at the store.
I ate strawberries for breakfast.
I put blueberries on my pancakes.
Если говорить о баночке с ягодным вареньем, то можно использовать форму слова в единственном числе.
"What kind of jam do you have?"
"I have strawberry."

Of course ‘raspberry’ can be both countable and uncountable. It’s uncountable as a flavor, countable as a piece of fruit.
I taste some raspberry in the muffin.
There’s no raspberry in the recipe.
