It can help to remember APPARENTLY is related to APPEAR. So APPARENTLY means IT APPEARS THAT.
It's often used for something that is not necessarily 100 percent proven, but is implied from existing evidence.
In your example once can imagine the two people involved have played ten games of chess. The speaker has won every game, so it APPEARS that the other person can't beat him. It's possible though, that if they played enough games, the other person might eventually win.
On the other hand, it would be silly for me to say, "Apparently Usain Bolt can run faster than me." He's the fastest person in the world, so he can DEFINITELY run faster than me.

Apparently you cant beat me? - This could be someone antagonising a person and implying that the cannot beat them in something. This could be a statement posed as a question.
You use apparently to state that the information you are saying is something that you have heard, but you are not sure if it is true or not. You used apparently correct in the example sentence.
