What do you do in your free time?
I'm interested in hiking. You know, I'm crazy about nature and in my opinion the best way you can enjoy nature is hiking, not only you can enjoy of being in nature, but also you able to spend a memorably day with your friends or family.

Not only can you enjoy being in nature but you are also able to spend a memorable day
With enjoy you don’t need a preposition afterwards. You enjoy eating, chatting, learning etc
You can’t say “you able” as there’s no verb! So I added “are”
Memorable is the adjective. Memorably is the adverb. A memorable day. A day spent memorably
