Why are the characters "的是‘ used in this sentence: 我 点 的 是 一被咖啡。

I’m just a beginner in Chinese, same as you, if I were to guess, it seems the phrase might be 我点的是一杯咖啡。
“I ordered a cup of coffee.” The 的 serves to nominalize the preceding phrase. In this context, it just serves for emphasis. A literal translation would be “What I ordered was a cup of coffee”.

your sentence should be translated as : 'what I ordered was a cup of coffee . ' So you want to emphasize what you ordered was a coffee, not cola or beer or anything else . '
我爱的是你。（Who i love is you you you , not her ）
我买的是最好的。（what I bought is the best。 if you say 我买了最好的。 it has no emphasis )

I think the sentence is: "我点的是一杯咖啡" (What I ordered is a cup of coffee.)
2. “的” can be noun, particle, and pronoun. "的是" is not a phrase.
3. In the sentence, "我" is Subject, "点的": the verb "点" followed by the particle "的", the new formed phrase "点的" indicates an action/thing/attribute's ownership. "是" is the predicate, "一杯咖啡" is the object.
