Hi friends, can you help me understand this line from breaking bad season one. I just don't undestand what "that is" means here. It makes no sense to me.
1. That is some stone-fine tick tick you've been cooking there, ese.

In this case, "that is" is being used as an exclamatory expression. Exclamatory expressions are used to make an emphatic comment. I imagine that one of the characters is commenting on the quality of what someone else is cooking, and that ticking sound also serves to make the moment more dramatic.
