Yes, evidence can be either singular or plural. Examples: "The text message is evidence that he was having an affair with the woman." (singular) "All the evidence points to guilty" (plural) "The evidence leads us to believe that he is innocent" (plural)

If you meant to ask whether the noun is countable, then no. "Evidences" is not a word.
