陕西关中有一种独特的面条叫“biang-biang面”，介于“干捞面”和“汤面”之间。
Biang字，据说是目前笔画最多的汉字，称“世界汉字之最”。其文字的字型是所有传统字典、包括《康熙字典》不曾收录的，而其文字的发音，也是国语普通话拼不成的。陕西关中Biang-biang面文字儿歌这样唱到：
“一点上了天，黄河两道湾，
八字大张口，言字往进走，
你一扭我一扭，你一长我一长，
当中加个马大王，心字底月字旁，
挂个丁丁叫马杠，坐着车车逛咸阳。”
“Biang”字和“Biang-biang”词汇的发音是拟声词，其相声得名如下：
1. 面在制作的擀制和拉扯过程中在案板上会发出Biang-biang的声音；
2. 面在下锅时，在锅沿上会发出Biang-biang的声音；
3. 面在捞出和调味搅拌过程中，发出Biang-biang的声音；
4. 面在入口时，在嘴边会发出Biang-biang的声音；
5. 具备以上声音特性的面十分柔韧而切有弹性，胃口筋道

the more diffilcut the character to write, the less it is used.as usual some compex character were not widely used.
