What difference between happy and rejoice? Sometimes I don't understand why we say I happy see you, but we don't say: I rejoice see you!

'rejoice' is a verb, it shows the action to express happiness. 'happy' is an adjective to show how you feel (as you know.) You ARE happy but You REJOICE as well.
