The correction for the second one is: "I didn't expect that the princess would be so humble." In the present, you expect something about the future e.g. When I meet the princess, I (don't) expect that she will be humble. The perspective of your sentence is the past and so we change "will" to "would".

the second one is grammatically incorrect. The first one is correct. You are surprised the princess is so humble.
