What is a honorific form of 먹었습니다?
Does this is a 잡수셨습니다 ?
If yes, why they so differnt?

yes, you are right. 잡수다 is honorific expression of 먹다
But, nowadays we don't use 잡수다. we use 드시다.
드시다 / 드셨다 meaning is same. so this is more natural than 잡수다
