The best word for jiaozi is... jiaozi. 'Dumplings' doesn't match exactly. When talking to English speakers you have to indicate that you mean 'chinese dumplings'. But I'm afraid most of them can't imagine what you want to express. The shape and size. The colours. The taste. They don't know the variety. (I've seen a jiaozi mould once, but I don't think a lot of people would use it.) Those who have been to China wold know what you mean with 'jiaozi'.

As I know, there are may types of "Jiao Zi". For eg. shrimp dumplings,pork dumplings

I always thought that: dumplings are used to refer to the jiao zi are boiled in water.　 potstickers are used to refer to the jiao zi that are fried on a pan.
