"I miss what's missing" Is it grammatically correct?

It is grammatically correct yes.
In this sentence you are saying that you wish you had what isn't there. We don't say this ever... but its nice. It could be a way of saying, there is something missing. You may not be understood straight away, so be ready to explain yourself.
