Hi. Does this sentence mean “I had taken a train only once before I reached the age of discretion (but I have never done that since). (Now I’m on the train) So all the surroundings look fresh to me.”

That's correct I think. But it looks weird sentence . Because ”なので”　is sort of formal, against that ”なんだね” is casual.  「列車は物心つく前に乗ったきりなので... 」and「全部が新鮮なんだね」sound like that they are spoken by different persons .
