What is the difference between "essuyer" and "sécher"? 
Which one should be used for something that is dried by the wind?

Answer

"essuyer" is to wipe. It implies the use of some sort of towels. So we wouldn't use "essuyer" for the wind.
Ex : Ce torchon sert à essuyer la vaisselle. (This towel is used to dry/wipe the dishes).

"sécher" is to become dry. 
Ex : Le linge sèche plus vite quand il y a du vent. (The laundry dries up more quickly when there is wind)
