I'm watching the series "The Night Of" on HBO and I wonder what this title means. The night off would mean the night that I am not working, right? But "of" with only one f...?

You're right about night off.
The Night Of comes from what would be said at the beginning of a court case.
Something like:
On the night of 17 September, 2023, you are accused of murdering ...
So it's just indicating that a crime happened on this night. It's a very clever title - and a good show)
