مدرّسToday, Italy celebrates Father’s Day. In Sicily—especially in Palermo—it’s traditional to prepare a special and delicious pastry called *sfincia di San Giuseppe*. This treat is made with choux pastry dough, filled with ricotta and chocolate chips.
The dessert has ancient origins, probably linked to Arab cuisine, with the name deriving from the Latin spongia (sponge) and the Arabic ʾisfanj, referring to the soft, honeycomb-like consistency of the dough. It was passed down by the nuns of the Stigmata monastery in Palermo, who enriched it with typical Sicilian ingredients such as ricotta, chocolate and candied fruit.
