I would use ‘customer complaints’ as the general term and ‘customer’s complaints’ to refer to a specific customer.
We take customer complaints seriously here.
I’ve responded to the customer’s complaints. She was satisfied with my explanation.

For the first one, if you are talking about many customers, you need to say "customers' complaints", that is to say, the apostrophe needs to go after the "s".
