Obviously Spanish is the easiest, but I'd recommend to start with the hardest. You know, it will be easier to learn easier ones after.

Spanish is easiest

Well for a Chinese speaker, they're all very different from your language. But of those three the easiest is French and Spanish (they're pretty much tied in difficulty). Since Spanish is more useful I would suggest that. German is relatively not useful and relatively challenging.
