(Your Chinese is quite good. Sometimes, a literal translation is not the best. We tend to express the same sentiment a little (or very) differently in different langagues. So below, I'll provide "correction" that is not the exact "translation" from your English but ones that (imo) express what you're trying to say.) 

First of all I want to say, Today I finished my last exam. Yeay! Such a relief!
我首先想说的是，我今天上了我的最后考试。终于结束读书了。今天考完了最後一個科目, 終於不用再讀書了. 

好哇！真是一种解脱！終於解脫了! 

Just 10 more days and I will be on an airplane heading to Hong Kong.
仅仅有再十天，我就会搭飞机向前往香港。

I will be staying and working there for about 5 months.
我的计划是，在那里住和工作五个月模样/左右。
我打算在香港住和工作我个月模样/左右。

(working in HK for 5 months kinda implies that you'll be living there. so I'd say "我打算在香港工作五個月左右") 

Obviously, I am very looking forward to my stay.
我明明非常期待到香港住。

(Using 明明 here, kinda implies that you should be looking forward to something, BUT somehow, you are not.)

I have been in Hong Kong quite some times already, so it isn´t exactly new to me..
我之前有就去过香港很多次，所以这一次不会令我觉得/感到。。。。what is the best word to put here?

Do you want to say new? Or do you want to infer that because it's not new, it's no making you anxious, or afraid or excited? The literal translation from "so it isn´t exactly new to me" would probably be "所以我並不覺得很新鮮". However, I suspect it's not really what you're trying to say. Maybe you can elaborate a bit.

我一直都认为香港是我的第二個家/故乡？。 把香港當作(/視為)我第二個家/故鄉. (either will do.)

I love the food there and the efficiency of the public transport.

It is very easy to get around, although it is very crowded most of the time.
虽然香港所有的地方(/到處)都很拥挤，但是你很容易可以从a走到b. How to say this, you can easily get from A to B, or get around ? I'd say 交通很方便 (transport is convenient) or 要去哪裡都很方便 (it's very convenient wherever I want to go).

I remember the first time I arrived in Hong Kong in 2011..
我记得第一次到香港是2011年，

God, I hated the crowd!
天啊，我那时间真的觉得人丛群很烦。

那時 or 那時候. (Sorry, I don't know how to explain why "那時間" is wrong.)

I am used to it now.. well, sort of/kind of.
我现在已經习惯这样的情况，...多少啦 (literally "more or less" lol) 

I am also looking forward to learn more Cantonese and aim to be fluent by the time that I leave.
我都也期待着可以继续学习粤语，而且我的目标/目的是，我回荷兰/离开香港那天，我的粤语应该变成流利的。

我的目標是在從香港回荷蘭的那天, 我可以說流利的粵語. 

In this case, 目標 (objective/goal) is more sutible than 目的. 目的 is more like the motivation (of doing something)

I hope I will be able to achieve this.
我真希望可以达到这个目标的。

I AM HAVING ENORMOUS DIFFICULTIES TO TRANSLATE MY TEXT TO CHINESE. Please help me out by teaching me some new words to express my translation more accurately. Thank you so much! I notice that even though I can have daily conversations in China without too much trouble, writing a text is really hard.. sentence order..lack of vocabulary.. Anyway, here is my translation including the english so you know what I am trying to say:

十天剩下 or 剩十天 As title, and more formal.  More conversational, 还有十天

I will be staying and working there for about 5 months.
我的计划是，在那里住和工作五个月模样/左右。  大約在那儿做五个月的工作 You don't need to translate "stay" since it would be understood, unless you have Star Trek's transporter!
我打算在香港住和工作我个月模样/左右。

我明明非常期待到香港住。 很明顯期望此行 "looking forward to the journey" is more natural in Chinese than "stay"

虽然四处走动方便但是常常是人山人海的 An idiom to mean the mass of people is like a mountain range or the vastness of the ocean. 香港所有的地方都很拥挤，但是你很容易可以从a走到b. How to say this, you can easily get from A to B, or get around ? 从 A 到 B 易 is the shortest form, though a bit more formal.  Replace 易 with 方便 (convenient)

[我]记得第一次到香港是在2011年， or even more concisely, 2011年, 首次到港 of course you must have the context otherwise it just means "harbor"
