I love you contains much more emotion. I love you is what you'd say to your spouse, parents, or it can mark an important development in a romantic relationship. Typically the "like" leads to "love." You can say "I like you" to anyone, romantic or not.
Let's say you met someone at a coffee shop (as friends, for business, or romance - anything) and you have a good conversation. You could say, "you're nice, I like you." And that would be totally acceptable. But telling them you loved them would probably make them nervous :)
There's also cultural differences I imagine. In the U.S., it's safe to say that telling someone you love them (in a romantic relationship) is often a sign of commitment and strong intentions for that person and relationship. Many people may be in a relationship for weeks, months or even years before telling each other they love them.

If we try to find for these two words the French equivalents, I think we will have : I like = ça me plaît and I love = J'aime / J'adore

That's a good answer, but some people use love very loosely such as "I love ice cream" when what they really mean is they like ice cream a lot. Even in relationships people might say "Hello Love" which is just a term of enderment and not a proclomation of strong feelings.
