I usually talk with my Chinese teacher on Skype about the Movies you saw recently, what you had for lunch and whether you liked it or not. etc. Basically very basic stuff which surrounds your daily life. You really do not have to think hard to come up with an interesting topic. Just start with anything you are interested in, what you did today, for example and the conversation will start to evolve from there.

food, travelling, hobbies, recent interesting events happening, movies, music, anything... :)
