what does the 'sa' in sukisa mean?

Sa in this text doesn't have a meaning. It's a particle used for declaration but it is not the most polite form (but it's not very impolite either). It is usually said in conversations and not in writing.
Some other examples:
Sukidesu.
Sukidayo. (normally spoken by men)
Sukidaze. (normally spoken by men)
Sukida. (normally spoken by men)
Sukiyo. (normally spoken by women)
Sukinano. (normally spoken by women)
Suki.
Each has differences in politeness, directness, and meaning, which are not very easy to explain. You learn by reading many Japanese text to get a feeling of each... Sorry I cannot explain any better.
