The first example sounds like a figurative use of the word 'journey', meaning a transformative experience. With the second example, you might comment that the food 'has been great' on the last day of your trip. "has been" is basically used to refer to something in the past. You can probably mostly replace is with was.. i.e. It was a remarkable journey. This trip's food was great.
