When you can only see/meet your spouse/partner, then how do you say it in English?
In Korean, we have a term "jumal-bubu," literally it means, a weekend couple.
Is it okay to say it 'a weekend couple' in English?
Or are there other ways to call it?
- We could only see each other on weekends for the past a half year.
I'm curious that it's okay to say like this, too.

US:
If you only see each other on weekends because you live in separate places during the week, we would call that "a long distance relationship."
If you only see each other on weekends because you're too busy during the week to spend time together, there's not really a word or phrase for that.

Don't think we have a term for this, as uncommon in the West.
'a weekend couple' - would definitely give the right impression, but also probably get a question about meaning. Might be the best way to start. So definitely ok to open with this.
In the end, you'll likely be explainijng what you mean, as you have above.

Yeah don't say weekend couple, people might get the wrong idea. I would say "I only get to see my wife on weekends" and you could further elaborate by saying "...because she lives in a different city"
Many phrases from other non latin languages don't tend to translate well into English so you need to do your best to explain what you mean.

In English, a "weekend couple" might well be understood a little differently. It could be taken to mean a casual couple, not very committed to each other.
"We could only see each other on weekends ["at weekends", in British English] for the last six months" - This is fine I can't think of a way of saying this is in a word or two in English
