天下皆知美之为美，斯恶已；皆知善之为善，斯不善矣。有无相生，难易相成，长短相形，高下相盈，音声相和，前后相随。是以圣人处无为之事，行不言之教。万物作，焉而弗辞，生而弗有，为而弗恃，功成而弗居。夫唯弗居，是以不去。

根据老子的思想，万物都是相对的。比如美和丑，善和恶，长和短，有和无。他们互相对立，也互相依赖。If the beauty is everywhere, no one will see it as beautiful anymore. So we shouldn’t push too hard on the things we cannot control. For example, if all the girls do the plastic surgery to become a standard beauty, there would be no one considered beautiful, because everyone is the same. Diversity is beautiful. 所以，老子说，我们要随万物生长而不去限制和控制，这样的无为，也就是不去做一些事，符合道。放下了强烈的我执，有时候选择不去做一些事，比去做还要困难。但是很多情况下，无为，不去做，才是智慧。

DOCTOR: What seems to be the problem?
CATHY: Well, I have a bad cough and a sore throat. I also have 
a headache.
DOCTOR: How long have you had these symptoms?
CATHY: About three days now. And I’m really tired, too.
DOCTOR: Hmm. It sounds like you’ve got the flu. Take aspirin
every four hours and get plenty of rest. Make sure you 
drink lots of fluids. Call me if you’re still sick next week.
CATHY: OK, thanks

LANGUAGE NOTES 
• What seems to be the problem? means “What is the problem?” Notice that the intonation 
falls at the end of the question. The doctor wants information, not a “yes/no” answer.
• Well is used as an introductory word. Notice how the vowel is drawn out, to sound like 
“Weeeeeell …” This can be used as a way to “buy time” while you think about what you 
want to say next.
• A bad cough … a sore throat … a headache: Notice the article “a” before each symptom.
• About is used to mean “more or less.” It’s used here to give an estimate of time.
• Take aspirin … get rest … Make sure … Call me: Notice the doctor uses the simple tense 
here to give instructions. This is the imperative form of the verb.
• Still sick means “continue to be sick.”

LOS CHILES MEXICANOS 1.

En México todo el mundo, o casi todo el mundo, come chile. Sin importar esto, la cocina del chile es, estrictamente hablando, nacional. Es lo que nos define, aunque no de un modo exclusivo, frente a otras dietas y cocinas del mundo.

La multiplicidad de moles, muchos de ellos, como hemos visto, ya de uso corriente entre los antiguos mexicanos, aun cuando todavía no fueran “transmutados” por la presencia de los ingredientes traídos por los españoles, es formidable. Hay mole amarillito; mole negro, mole de olla, mole verde, mole de hierbas, pipián, manchamanteles, xoloztle, chorreado, embarrado, poblano, chimole…

Y en cuanto a las salsas…

Un recuento del Museo Nacional de Culturas Populares consigna más de cuarenta preparadas únicamente con chiles de fácil adquisición en el mercado. Nada más con el chile serrano pueden hacerse nueve salsas distintas: cruda, cocida, frita, asada, verde, roja, “mexicana” etc., según la enumeración hecha por ese omnívoro historiador de las comidas que es José N. lturriaga; añadiríamos las variaciones que se pueden lograr si a cada una de ellas se le añade o no ajo, o cebolla, o cilantro, según.

Por otra parte, el chile en México ha llegado a ser casi un símbolo patrio. Los mexicanos no sólo lo emplean en la mayoría de los platillos que consumen, sino que se identifican vital, ontológicamente con él.

La diversidad y la riqueza de los platillos preparados con este producto es impresionante, desde los típicos y consistentes moles de Puebla, Oaxaca y Yucatán, para hablar sólo de los más conocidos, hasta las refinadas salsas y adobos del Estado de México, Guadalajara o San Luis Potosí, la variedad de gustos, sabores e ingredientes que en las cocinas del país se emplean en conjunción con los diferentes chiles ha permitido el desarrollo de una gastronomía característica, sensual e incitante, de un gusto peculiar, que no obstante las transformaciones y las influencias, conserva una tónica particular, debida...
