Is it correct to say "I wish you happy"? Shouldn't it be "I wish you joy"?

Motahareh, the phrase "I wish you happy" is incorrect and ungrammatical, but a few similar phrases are fine. Moreover, saying "I wish you joy" is fine too.
Alternatively, you could try saying one of the following:
1. I wish you happiness.
2. I wish you much happiness.
3. I hope that you'll be happy.

Yes the first one is incorrect, happy is a verb, you need to use the noun here which is happiness.
