What does "sound like anything but" mean? '"Yours faithfully" can't be trusted. "Sincerely" feels insincere. And your "kindest regards" sound like anything but.'

"Anything but ...." means it could be anything, except for .... // basically, that the thing or person being described could be described as anything, but NOT that adjective. It is a way to say that the person/thing being described doesn't possess that quality
Some examples:
- He was anything but intelligent. = he wasn't intelligent at all, he could be anything, but not intelligent
- This evening is anything but pleasant. = this evening isn't pleasant at all, it can be many other things, but not pleasant
- I am anything but a quitter. = I may be a lot of things, but not a quitter
Your phrase "kindest regards sound anything but" means the regards aren't kind at all, they don't seem kind ... the full phrase would be "anything but kind" but "kind" is ommitted as it is already present in the word "kindest"

Hi, "sounds like anything but." = sounds the opposite.
It literally sounds like anything else except that thing.
Yours faithfully is the correct form of address when writing to someone you do not know the name of:
Dear Sir or Madam, we are writing to everyone in your neighbourhood for the following reasons... Yours faithfully
Yours sincerely should be used in semi-formal letters where you know the person's name, but you hardly know them at all.
Dear Mr Smith, Thank you for being my bank manager... Yours sincerely
Kindest regards are the right words for an email or an informal letter to someone you like but are not deeply connected to - for example if I were writing to my neighbour and certainly didn't want to write "with all my love."
Dear Tom, Thank you for being such a good neighbour... Kindest regards,
Love is used when you love that person.
For example, your Aunty.
Dear Aunt Margot, Thank you for being such an incredible aunt;... With all my love,...
