Instead of doing work I rather spend quality time with my children. I would like to prioritize my family on the weekend even I am wondering the technology of my work.
Instead of working, I would rather spend quality time with my children. I want to prioritize my family on the weekend, even though I’m still curious about the technology I work with.
I’d rather spend time with my kids than work. On weekends, my family comes first, even if I’m still interested in the tech from my job.

Of all the options you wrote the following sounds best:
I want to prioritize my family on the weekend, even though I’m still curious about the technology I work with.
You could also say: “Despite finding my job interesting, (at the weekend) my family comes first”.
When using “despite” or “in spite of” you always follow using the “ing” form of the verb.
I hope you enjoy your weekend!

The only point I would add in terms of usage, as a native English speaker from England, is that we say AT the weekend instead of on the weekend. 😀
