Both smell and sniff are things that you do with your nose. However, smell places the focus on the SENSE of smell (HOW something smells), whereas sniff places the focus on the ACTION of taking fragrance/air through your nose.
Smell can be used as both a noun and a verb.
Sniff is only a verb.
