When do we use (e.g.) "I like" or "I do like" ?
I've noticed that many people use sometimes I like/make/love etc. with "do" and sometimes without do. Where's the difference?

It's used for emphasis, especially to contrast against a previous statement.
eg. "I apologise" vs "I do apologise". The second statement has more emphasis.
For the contrast, "I don't have a garden, but I do like flowers." (ie. although I don't have a garden, don't misunderstand me; I like flowers nonetheless) Without "do", it sounds like you're contradicting yourself instead of being specific.
