Some is a complicated word. It can be a pronoun, an adjective or an adverb.

I want some water. <-- adjective
The answer may change some. <-- adverb
As a pronoun, it means a certain amount of something. It could mean one or more than one.
Give me some of the books. (Give me one. -or- Give me two or more. Usually when you say this you mean two or more.)
As an adjective, it can mean an unknown amount.

As an adjective, it can also mean something that is unspecific.
Let's go to some restaurant. (You don't know what restaurant, just some restaurant)
Let's go to some restaurants. (You don't know what restaurants, but you want to go to more than one)
