Is this sentence incorrect or just not very Chinese?
In English I can say 'I am not looking forward to writing it' and it's perfectly okay. we can look forward or not to anything really. Now I thought 期待 was the equivalent of 'look forward to' , but when I wrote 我并不期待写 in a diary a little while ago, everyone but 1 person changed it to 想 or 愿意.
What is wrong with using 期待, does it not mean to look forward to?

I think 期待 is a formal word, which means you are reeeeally looking forward to doing sth.
In the sentence' I am not looking forward to writing it.' It's a casual saying, so it would be better if you use 想。
If you want to say
I am looking forward to Christmas.
Yes, you can use 期待。

"期待" in our daily talk more often used in this way "i hope thing works/ i hope everything goes well." or sometimes we would use it when we want others to do sth
"想" is a informal word, often in verbal and casual conversation, which has the similar meaning as "期待", but there are some different meaning, like "我很想你"--i miss u very much, and "我想吃泰国菜"--i prefer thai food, or "我想回家了- i wanna go home"

我觉得 " 期待" 更像是 expect.
