Why, in the first sentence, is the verb after the 'subject' (you), while in the second one the verb is before the subject (my friend)?
How can I say the second sentence if the noun is plural (friends)?

But I have the last doubt: in Italian the expression 'ecco qua' is also used to introduce a person (Ecco il mio amico, si chiama George - This is my friend, his name's George). Then can I use the sentence ''Here's my friend'' instead of ''This is my friend''? Thank you for the reply in any case.. really complete!

-I'm here, You're here, He's here (....) \ Here I am, Here you are, Here he is (....)
- idiomatic expression: here you are (give/hand something to someone)
THERE
- My book's there \ There's my book --->different meaning
- You're there, He's there (...) \ There you are, There he is (...) (as 'here', but when the person is far from the speaker; 'there I am' has not any sense)
-There isn't an idiomatic expression with there (there you are), since it has not any sense.

A very good question. I thought about it for a bit, and decided the first reason is that (1) "here you are" in 90% of the circumstances really is something you say when you hand something to another person, like "ecco qua" in Italian. It does not usually mean "you are here."
In other words, "here you are" is a different construction from "here's my friend," which generally means "my friend is here."
The plural of "here's my friend" is "Here are my friends." There is no formal contraction for "here" and "are."
The second reason is that it does not sound right in English to say "here my friend is" or "here my friends are."
You only use "here + N + 'to be verb' " when the noun is a pronoun.
Here I am
Here they are
Here you are
Here he is
Here she is
Here we are
You cannot say
Here the doctor is
Here the doctors are.
(PS this rule applies to "there" as well)
