뜨겁고 매콤한 국물이 있는 음식을 먹었을 때 '얼큰하다' 라고 말합니다.

'시원하다'는 말은 '바람이 불어서 시원하다', '에어컨을 켜서 시원하다' 로 쓰이는 것이 맞는데

옛날부터 어른들이 뜨거운 국물 음식을 먹었을 때
또는 뜨거운 온천탕 안에 들어갔을 때 느껴지는 느낌을
뜨겁지만 '시원하다~'라고 표현하기도 했습니다. 
일종의 습관적인 표현으로 생각하면 됩니다.

시원하다 얼큰하다 둘다 맵고 뜨거운 음식을 먹을 때 쓰는 표현입니다.

'얼큰하다'는 hot and spicy and i love this hot taste 라는 느낌으로 사용합니다

'시원하다'는 hot and clear taste라는 의미입니다 맵지 않은 음식에도 사용할 수 있습니다.
this is cultural expression, so it is not easy to understand. when we drink too many bottles of alcohol, we really hope to drink water next day, right? but mostly Korean looking for hot and spicy soup coz it make us sweat and help us to loose the poison of the alcohol from our body. 
and another reason we use 시원하다 . as you know, Korea has 4 season, and summer season is really hot like your May. so if we have some hot food in this season we sweat a lot and this make out body cooler.
