What kind of or which kind of? And why?

Strictly, "which" is used if the choices are known. :Which kind of soup would you like?" And "what" if they aren't known. In this case, because of "kind" implying a choice between know options, "which" is strictly correct.
However, in everyday speech you will often hear "what" instead of "which" in these cases.
