What's the difference between " einkaufen " and " kaufen "?

''kaufen'' means ''to buy'' und ''einkaufen'' means ''to go shopping''.

We use einkaufen,/ kaufen when we are talking about food:
Ich kaufe im Supermarkt Lebensmittel ein. OR:
Ich kaufe im Supermarkt Lebensmittel.
Peter kauft jeden Montag ein.
NOTE: einkaufen is a so called separable verb: -ein is the prefix and at the end of the sentence, whereas kaufen is the verb that goes on second position and gets the inflections:
Ich kaufe
du kaufst
er / sie /es kauft
wir kaufen
ihr kauft
sie /Sie kaufen + ein
2. Kaufen is also used, when we are talking about other things:
Mark braucht eine neue Jeans. Er kauft eine Jeans für 60 Euro.
Familie Meier muss bald ein neues Auto kaufen.
NOTE: We would not use einkaufen in this context.
