interested in learning or interested to learn, which one is correct?

The correct form is "interested in learning". "I am interested in learning more about this topic"
I have certainly seen "I am interested to learn ..." on more than once occasion, but it's technically not correct. The noun "interest" requires the use of the preposition "in". Thus the adjective "interested" does too.
Putting that in less grammatical terms, you are interested *in* something, not *to* something.
