Should I use "in the evening", or "in the evenings" ? For example, 1. I usually work out in a playground in the evening(s). 2. I might take a bike ride with my son in the evening. When we are saying some daily routine, like in No.1, should we add an "S" ?

No, we just leave it in the singular. :)
