"Il fait du soleil" is incorrect. "Il fait soleil" is correct but I would NEVER EVER suggest using it. It sounds wrong AF. We don't say "il fait neige", "il fait pluie" or "il fait vent", so don't use it please. "Il y a du soleil" is correct and the usual way we say it.

They're all correct with one exception i.e. if it's cloudy none of them is correct.

Ces trois expressions sont très correctes. La plus fréquente serait 'il y a du soleil', la moins fréquente, 'il fait soleil' (sauf dans le sud). Mais on dit 'il fait grand soleil' et non pas, 'il fait du grand soleil'
