How can I use 그쪽 ?
Instead of using 당신 in a formal way of speaking (because I know that 당신 is rarely used in spoken form), I found 그쪽 which also means "You". How can I use it?

I look it up from dic.naver.com and found this explanation is good.
However, this word is a bit dangerous to use, I believe, because:
1) This word should be used when indicating "higher" person than you, such as old people, boss, etc.
2) When I think of, in many cases, this word is used to indicate "you" or "your party" when the speaker is upset. The case like, "It's YOUR fault!". So, I think it can only be neutral at most and sometime it can be rude, I think.
Before you get used to it, it's safe not to use it often. :)

1) In many cases, "YOU" is omitted. Just look at the person and talk/say.
2) If you need/want to indicate "YOU", these are the cases that I can think of.
a) At school, you can the teacher, teacher + "님" -> e.g. "선생(teacher)님께서 문을 닫으셨나요? (Did you(=teacher) close the door?)"
** "께서" means "가/이" but it's polite way of saying "가/이". It's attached to the subject of the sentence.
b) At work, you call the job titles+"님". For example, "과장님, 부장님, .."
c) At the shop, you call "고객님" (customer+님)
