"Stitch" = put 2 sides/ pieces together with a needle and thread, usually done by hands.
"Sew" = repair, put together with a needle and thread or on a sewing machine, also means to make the whole dress.
"Seam" = to attach to things/pieces to each other, not necessarily with a thread, can be with a glue or by applying high temperature.
