Weißen und wissen
I came across a group of similar sentences in my textbook:
Das weiß ich doch! - I already know that!
Das weißt du doch! - You already know that!
Das weiß ich nicht. - I don't know.
I have looked up the word 'to know' in a dictionary. It is 'wissen'. And 'wießen' is to white.
So why wießen is used here?
Why is it not wieße for ich?

'das Weißen' bedeutet whitening, das Wort 'wießen' gibt es nicht. The verb 'wissen' is irregular, see here:

There is no "wießen". "Wissen" is irregular and has some forms in the present that are similar or equal to ones of "weißen" (which is regular), that's what you see here.
wissen: ich weiß, du weißt, sie/er/es weiß, wir wissen, ihr wisst, sie wissen
weißen: ich weiße, du weißt, sie/er/es weißt, wir weißen, ihr weißt, sie weißen
