How does one say 'I hope you are enjoying your summer' in French?
Is, "J'espère que vous profitez de votre été!" correct?

Yeah, it's correct.
There are, also, many ways to say the same thing, e.g. "J'espère que vous amusez bien en été" or "j'espère que vous passez un bon été", etc.
