I cut a watermelon into two halves, and then Isabella and I finished the flesh of each half. When I asked her to throw away the leftover watermelon rind, Isabella said It was watermelon skin. I knew the whiteish part between red flesh and green skin was rind, but in this case, I didn’t peel the green skin off, so it was attached with the rind. Should I say please throw away the watermelon rind or skin?

I think you had it right regarding the rind, but when you want to talk about the leftovers once you ate the flesh you can just use the term skin as a general term, as you would do for orange skin for example.

Don’t overthink it 🤗 I think you were right to use rind: in American English I’ve never called it skin.
