These parts of an animal eaten as food are called 'offal'.
In Britain, we eat some parts but not all. It is pretty common to eat liver. Eating kidneys is also normal, but less common that eating liver. Some people eat tripe (cow's stomach). A dish called 'haggis' is popular (and gorgeous). It's a Scottish dish made of mixed offal wrapped in sheep's (I think) stomach.

Here people do it. They use it, mostly, in soups because is "healthy" ... for who? because I don't think animals are thrilled about the whole situation. My main thoughts are "AAAAAAAAAAAAAAAAA" **very eloquent yelling inside of my head** By the way, I'm one of those vegan freaks ^^

That definitely depends on the country. My impression is that the British eat some - especially cow and pig offal in sausages. I'm not a Brit, though so....
Americans are really picky eaters. We don't generally eat any organ meats knowingly and pretend that we don't know that organ meats go into things like sausage. This is more true in big cities than out in rural areas, though.
