Watching can sometime be in past tense vs seeing is present.
Example:
Breaking bad is worth watching. (as the show has already concluded and there are no new episodes)
Cowboys stadium is worth seeing in person at-least once.

It's exactly the same as the difference between to watch and to see - if you know what those words mean, you'll know what the difference is between 'worth watching' and 'worth seeing'.
In many cases, they can be interchangeable, though. You can say that a movie or TV programmw is 'worth watching' or 'worth seeing'. In this context there's no difference.
